SUMMARY: Under direct supervision, and according to established policies and procedures, receives, sets up, breaks down, prepares, serves, stocks and stores a variety of food products in the Cafeteria for customers. Responsible for preparing and /or building food items at the stands while providing customer service and adhering to food safety, handling, storage and sanitation procedures. Maintains cleanliness storage, label/dating and sanitation standards for all assigned work areas. RESPONSIBILITIES: Responsibilities include assisting cooks, chefs or managers by preparing ingredients for recipes according to recipe specifications. Responsible for recording food waste and temperatures at each stand within the retail space. Responsible for preparing customer beverage orders to brand specifications and customer requests. Responsible for accurately processing point of sale transactions according to cash handling procedures. Responsible for keeping inventory of, transporting, stocking, and cleaning/clearing products. Responsible for maintenance and cleanliness of dishes, serve ware, equipment, etc. Ensures freshness of items by checking date codes, temperature of holding areas, etc. Maintains excellent customer service and positive attitude towards guests, coworkers and customers at all times. Provides general support and assistance to all areas in the Cafeteria. Performs all other job duties as assigned. Reviews and prepares customer orders via kiosk technology for efficient service at all stands throughout the retail space. Prepares and builds food items according to standardized recipes and directions. Receives cash and makes change according to food items purchased by visitors and employees. Adheres to cash handling policies and procedures including operating register and cash and credit card transactions. Assists customers with kiosk ordering when needed. Closes out cash register following an established sequence adhering to the cash handling policy and places register tapes in cash banks for reconciliation. Maintains clean and orderly work station according to cash handling policy. Greets and assists customers while anticipating their needs. Communicates to supervisor any unusual transactions that take place. Sets up work stations including prep tables, service counters, hot wells, steam tables, etc. Receives or prepares food items in order to maintain food and retail displays and stands with the appropriate products and amounts ensuring freshness of items and visual appeal. Turns on appliances such as ovens, warmers and coffee urns. Ensures necessary utensils, plates, containers, condiments and related items are available for service. Prepares/assembles food as needed according to policies, procedures and following recipes specifications. Serves food to customers according to established portion control procedures using food handling sanitation techniques and standardized recipes and directions. Records left overs and waste using the tablet. Maintains proper food holding temperatures and records temperatures using the tablet. Breaks down, cleans, and sanitizes work stations. Insures that a manager or supervisor checks out work station before punching out for shift. Assists in executing the catering program by setting up areas, delivering catering carts, preparing relish trays, deli platters and sandwiches, serving patients, personnel and visitors and handling equipment returns such as chafing dishes, carts, coffee urns, trays and utensils plus handling all charges according to cash handling policy. Stocks and maintains appropriate levels of all products. Ensures guest satisfaction by maintaining all dishes, pots, pans, silverware, glasses, equipment, and kitchen utensils are cleaned and sanitized. Maintains dishwashing station, three compartment sink and related areas cleaned. Ensures equipment is clean and in working condition. Reports and issues to management. Performs other light maintenance and custodial tasks such as mopping, sweeping, cleaning carts, walls, counters, dish machine and dish room area as needed. Cleans refrigerators, freezers and obtains and delivers supplies from departmental storage areas. Assists in moving equipment. Fills ice machines and service units with fresh ice. Fills coolers and towers in grab and go areas using FIFO and checks dates of all products. Cleans spills as needed in absence of housekeeper. Performs other duties as assigned. Cleans trays, removes papers, trash and excess food from serving dishes as required. Places trash in proper waste containers as appropriate. Operates automated dishwashing machine. Loads and unloads dishes, trays, silverware etc. Monitors the operation of the machine insuring that detergent temperature levels are within established limits. Insures soaps and sanitizers are kept stocked and at appropriate levels at all times. Places cleaned utensils, dishes and trays in appropriate storage areas. Sorts, scrapes, stacks, and soaks pots, pans, dishes and utensils in preparation for sanitizing and washing by hand in three bay pot sinks. Rotates to and performs the functions of the positions within the job description of Cafeteria Assistant according to task sheets for each position. Cleans and maintains equipment, work and serving area ensuring an orderly and sanitary fashion by washing, wiping down and straightening equipment, utensils and counters. Removes unused food from area ensuring product to be saved is stored in accordance with strict guidelines. Assists in setting up for next day menu selections. Checks serving dishes for cracks, etc., checks supplies and general condition of assigned area and makes appropriate recommendations to supervisors prior to meal times. Adheres to Aramark and Lifespan safety policies and procedures including proper food safety and sanitation. Performs all other duties as assigned. BASIC KNOWLEDGE: Ability to read, write, understand and speak English and to perform arithmetic calculations. Interpersonal skills to effectively interact with customer and represent the Food Service Department when serving food or collecting monies. Grammatical and mathematical abilities to read and interpret recipes, prepare products according to standards, and count money in order to make change. EXPERIENCE: Up to one-month on-the-job training and experience to become familiar with job routine. WORKING ENVIRONWEMTN AND PHYSICAL REQUIREMENTS: Physical ability to lift, carry and place moderately heavy supplies,20lb min along with ability to stand for long periods of time. Exposure to cuts, burns when preparing food items. Hazards are minimized with adherence to established safety procedures. INDEPENDENT ACTION: Performs independently within the department’s policies and procedures. Refers specific complex problems to the supervisor when clarification of the departmental policies and procedures are required. SUPERVISORY RESPONSIBILITY: None.
