The Culinary Intern works alongside the Nutrition Services team to gain hands-on experience in healthcare foodservice, retail café operations, patient meal service, food preparation, sanitation, kitchen organization, and service execution. This internship is intended for students participating through the Grays Harbor College Culinary Program who have already progressed through their culinary coursework and are ready to apply classroom learning in a professional kitchen environment. Interns will participate in supervised kitchen operations, complete assigned learning tasks, and demonstrate their skills through a final meal menu project at the conclusion of the internship. Job Duties and Responsibilities 1) Assists with opening and closing duties in the kitchen, including workstation setup, stocking, cleaning, and preparation for service. 2) Prepares ingredients and completes mise en place for café service, patient meal service, and other assigned production areas. 3) Supports food production for retail café items, patient meals, floor stock, comfort carts, and special assignments as needed. 4) Follows standardized recipes and assists with hot and cold food preparation under supervision. 5) Practices and demonstrates safe food handling, proper storage, labeling, FIFO rotation, sanitation, and time and temperature control procedures. 6) Maintains a clean and organized work environment using clean-as-you-go practices and works collaboratively with kitchen staff and leadership. 7) Assists with catered events and special functions, including food preparation, setup, service, and tear-down. Completes assigned internship tasks, learning activities, and skill-building opportunities throughout the internship. 8) Develops, prepares, and executes a final meal menu for evaluation by a review panel and for service on the café line as the culminating internship project. *Essential Job Function Organizational Responsibilities In addition to the duties and responsibilities listed above, all interns are expected to support the Summit Pacific Medical Center mission, vision and values; comply with SPMC policies and procedures; and conduct themselves in an ethical, professional, respectful, and collaborative manner at all times. Required Education and Experience · Current student in the Grays Harbor College Culinary Program. · Student has already completed introductory coursework and is progressing through the program, anticipated to be in the third quarter. · Basic food preparation knowledge or culinary lab experience preferred. Required licenses, Certifications and/or Registrations · Washington State Food Worker Card, if required by placement. Required Knowledge, Skills, Abilities 1. Ability to learn and follow established policies and procedures. 2. Ability to read and understand written and verbal instructions and communicate effectively in a professional kitchen environment. 3. Ability to safely operate common kitchen tools and equipment and demonstrate basic culinary techniques. 4. Ability to maintain sanitation standards, proper food storage, labeling, and time and temperature controls. 5. Demonstrated teamwork, collaboration, professionalism, and willingness to accept feedback and direction. 6. Ability to plan, prepare, and execute a menu in a live foodservice environment with attention to organization, time management, quality, and service. The final internship project requires the student to develop a meal menu for supervisor approval; plan ingredients, prep needs, timing, station setup, and workflow; prepare and execute the approved menu items; serve the final meal to a review panel and on the café line during active service; explain the menu concept and preparation approach; and participate in a final evaluation discussion. Successful completion of the internship requires completion of this final project. Final Internship Project 1. Strong organizational skills; ability to prioritize, and reprioritize, work as needed to meet objectives. 2. Professional and effective written and verbal communication skills. Ability to identify and employ communication strategies appropriate to the audience. Grammar and punctuation skills as needed to compose professional documents. 3. Proficient in the use of current technology and software, including intermediate to advanced Microsoft Office skills (Word, Excel, Outlook). 4. Proven ability to handle confidential information with discretion. Ability to develop and maintain accurate documentation and records. 5. Demonstrated teamwork and collaboration skills. Strong customer service and interpersonal skills; ability to maintain composure and interact calmly and professionally with co-workers, providers, patients and visitors in a fast-paced, high-stress environment. 6. Ability to work independently using good judgment, problem-solving, organization, and prioritization skills to complete assignments in a timely, accurate, and effective manner.
